Arisawa
Arisawa Sake brewery 株式会社 アリサワ
Kochi prefecture
They focus on quality over quantity, especially with their main brand 'Bunkajin,' where they emphasize small-batch production, non-filtration, and post-bottle warming storage at -5°C. Their dedication is evident as their sake sells out every year,they even won a big award at the National New Sake Competition, showing that people really respect their Sake. If you're a fan of Sake, you should definitely try them.
Bunkajin 文佳人
Their main brand "BUNKAJIN" is highly popular locally, with their Sake often selling out towards the end of the year. We feel fortunate to have them here and hope to expand their fan base in Singapore. All the Bunkajin are produced in small quantities and employ a single heat pasteurization process, which preserves the authentic flavor without filtration. The motto of "搾るまでは手間をかけ、搾ってからは手を加えず" (putting effort into the pressing and leaving it untouched afterward) to create numerous exquisite and refreshing Sakes.

Arimitsu Sake brewery, located in Kochi with its excellent water, specializes in making gentle-tasting sake that pairs well with various dishes, including flavorful Singaporean cuisine. Their sake is renowned locally, especially in the southern region, for its exceptional quality.They've won top awards like the National Sake Appraisal Gold Award and the Kura Master Gold Award.
Akitora 安芸虎
Akitora is loved by everyone. They embody the spirit of "jizake" (local sake) by using local rice and water from the Akano River to create their distinct Kochi Sake. While the Sake from this region is typically light and dry, Akitora are versatile that can be enjoyed both on its own and with food. One of the unique aspects of their brewing process is their use of classical music, which adds a touch of whimsy and dedication to their quest of making exceptional Sake. The Sake are blended of humor and dedication.
Imazato Sake brewery 今里酒造

Imazato Sake Brewery is a respected and long-standing brewery with a 250-year history. In fact, the brewery's six buildings have been recognized as important cultural landmarks by the government. Location wise, they are in a basin surrounded by mountains in the warm region of Kyushu, but Imazato benefits from lower winter temperatures, which are ideal for producing premium ginjo Sake that requires cool fermentation.
Rokujyuyoshu 六十餘洲
Rokujyuyoshu is known for its rich umami flavor and lightness, making it highly appreciated by a wide range of people. In fact, Rokujyuyoshu has garnered numerous awards both domestically and internationally, establishing itself as a well-known brand among Sake enthusiasts. However, due to the small-scale production, this brand is not widely available.
Iwase Sake brewery 岩瀬酒造
Chiba prefecture
Iwase Sake brewery stands out for its unique brewing methods, particularly its use of one of the hardest waters to brew Sake. This water has high levels of calcium and magnesium, making it rich in nutrients and promoting active fermentation. Also, they are famous about Yamahai method Sake and aged Sake, they are one of the most classic and express.

Iwanoi is their main brand, e specializes in producing Junmai Ginjo Sake, utilizing five different types of rice. This diverse selection allows customers to explore and appreciate the subtle variations between the different rice varieties, adding an element of exploration to their Sake experience. Also they are famous about aged Sake.

Miyozakura Jozo 御代桜醸造
Gifu prefecture
Miyozakura Jozo, based in Minokamo City, Gifu Prefecture, is a small and dedicated operation with just eight people crafting their Sake. They currently have two brands: "Miyozakura" and "Tsushimaya." Tsushimaya specializes in unique Junmai sake and almost every month they release new types unique of Sake, while "Miyozakura" is dedicated to preserving the traditional flavors of the past. They are a well-known and respected brand in the Chubu region.
Tsushimaya 津島屋
The new brand "Tsushimaya" was established in 2012 at Miyozakura Shuzou. It is a limited edition brand created by Hiroe Watanabe. With a strong passion for pursuing his dream taste of Sake, he frequently experiments with different brewing methods, yeast strains, and temperatures to produce various types of Sake. As a result, they continuously produce new products throughout the year. We truly admire his craftsmanship and dedication.
Wakabayashi Sake brewery 若林酒造

Shimane prefecture
They take great care in crafting their Sake through small-batch production, exclusively using Junmai Sake. With a long history, they continue to embrace traditional brewing methods, including the Kimoto method. Their current Toji (master brewer), Yamaguchi san is known for reviving the Kimoto method, which had fallen out of use in recent years, making him the first brewer in Shimane Prefecture to do so.
Kaishun 開春
They focus on their beliefs and inspiration instead of relying too much on theories or data, which gives their sake a strong and robust character, making it delicious whether you drink it cold or warm. We love their aged Kimoto Junmai Daiginjo and Junmaiginjo, truly admire their passion and dedication for Sake.
